
Ingredients
- 2 salmon fillets (about 4 oz each)
- 1/2 cup quinoa (dry)
- 1 cup low-sodium chicken or vegetable broth
- 1 cup baby spinach, packed
- 1/2 cup grape tomatoes, halved
- 1/4 cucumber, thinly sliced
- 2 tbsp chopped fresh parsley
- 1 tbsp fresh lemon juice
- 2 tsp olive oil
- 1/2 tsp dried oregano
- 1/4 tsp sea salt
- 1/4 tsp black pepper
Instructions
- Cook quinoa in broth according to package instructions until fluffy, about 15 minutes; set aside.
- Rub salmon fillets with 1 teaspoon olive oil, oregano, salt, and pepper.
- Sear salmon in a lightly oiled nonstick skillet over medium-high heat, 3-4 minutes per side, until cooked through.
- Toss spinach, tomatoes, cucumber, lemon juice, and parsley with remaining olive oil in a large bowl.
- To serve, divide warm quinoa and veggies between two bowls, top with salmon, and drizzle with extra lemon juice if desired.
