- 2 medium sweet potatoes
- 1 cup, cooked and shredded chicken breast
- 1 cup, packed fresh spinach
- 1/2 cup, shredded reduced-fat mozzarella cheese
- 1/4 cup plain Greek yogurt
- 1/2 tsp garlic powder
- 1/2 tsp paprika
- 1/4 tsp salt
- 1/4 tsp black pepper
- 1 tbsp, chopped (optional) fresh parsley
Instructions
- Preheat your oven to 400°F (200°C). Scrub the sweet potatoes and pierce each a few times with a fork. Place them on a baking sheet and roast for 40-50 minutes, or until tender when poked with a knife.
- While sweet potatoes cook, steam or sauté the spinach just until wilted, then combine in a medium bowl with the chicken, garlic powder, paprika, salt, pepper, Greek yogurt, and half the mozzarella cheese.
- When sweet potatoes are cool enough to handle, slice them open lengthwise (do not cut all the way through) and use a fork to fluff up the insides, making a small well in each.
- Evenly divide your chicken-spinach-cheese filling between the potatoes. Top with the rest of the cheese.
- Return stuffed potatoes to the oven for 6-8 minutes, or until cheese is melted and bubbly.
- Sprinkle parsley on top, if using, and serve hot.
