
Ingredients
- 1 lb flank steak
- 1 tbsp olive oil
- 1 tbsp chipotle chili powder
- 1 tsp smoked paprika
- 1/2 tsp sea salt
- 1/2 tsp black pepper
- 2 limes (1 for juice, 1 for wedges)
- 1 cup canned black beans, drained and rinsed
- 1 cup cherry tomatoes, halved
- 1/2 cup red onion, finely diced
- 1/4 cup fresh cilantro, chopped
Instructions
- In a small bowl, mix olive oil, chipotle chili powder, smoked paprika, salt, pepper, and juice of 1 lime.
- Rub the spice mixture all over the flank steak and let it marinate for at least 20 minutes (or up to overnight in the fridge).
- Preheat grill to high heat. Grill steak for about 4-5 minutes per side for medium-rare, or until desired doneness.
- While steak rests, combine black beans, cherry tomatoes, red onion, and cilantro in a bowl. Toss with a squeeze of lime and a pinch of salt.
- Slice steak thinly against the grain and serve it topped with the black bean salsa and lime wedges on the side.
