- 1 lb boneless skinless chicken breast, diced
- 1 cup dry brown or green lentils, rinsed
- 1 tbsp olive oil
- 1 medium yellow onion, chopped
- 3 cloves garlic, minced
- 1 tsp ground cumin
- 1 tsp smoked paprika
- 1¼ cups low-sodium chicken broth
- ½ cup fresh lemon juice
- ½ cup chopped fresh parsley or cilantro

Instructions
- Heat olive oil in a large pot over medium heat, then add onion and cook until softened, about 5 minutes.
- Stir in garlic, cumin, and smoked paprika and cook until fragrant, about 1 minute.
- Add diced chicken and cook until lightly browned on all sides, about 5 minutes.
- Pour in lentils and chicken broth, bring to a gentle boil, then reduce heat and simmer, covered, until lentils are tender and chicken is cooked through, about 20–25 minutes.
- Stir in lemon juice and fresh herbs, then season with salt and pepper to taste.
- Let the bowl rest 5 minutes before serving to let flavors meld and lentils absorb more flavor.
