
Ingredients
- 450 g large shrimp, peeled and deveined
- 2 bell peppers, sliced (mixed colors)
- 1 red onion, sliced
- 1 tsp chili powder
- 1 tsp cumin
- 1/2 tsp smoked paprika
- 1 tbsp olive oil
- 2 tbsp lime juice
- 2 cups cooked brown rice or cauliflower rice
- to taste cilantro, chopped
Instructions
- Toss shrimp with chili powder, cumin, paprika, and half the olive oil.
- Heat the remaining oil in a large skillet and sauté peppers and onion for 4-5 minutes until slightly charred.
- Push vegetables to the side, add shrimp, and cook for 2-3 minutes per side until pink and opaque.
- Toss everything together with lime juice.
- Serve over rice or cauliflower rice, topped with fresh cilantro.
