  1. Preheat your oven to 400°F (200°C). Scrub the sweet potatoes and pierce each a few times with a fork. Place them on a baking sheet and roast for 40-50 minutes, or until tender when poked with a knife.
  2. While sweet potatoes cook, steam or sauté the spinach just until wilted, then combine in a medium bowl with the chicken, garlic powder, paprika, salt, pepper, Greek yogurt, and half the mozzarella cheese.
  3. When sweet potatoes are cool enough to handle, slice them open lengthwise (do not cut all the way through) and use a fork to fluff up the insides, making a small well in each.
  4. Evenly divide your chicken-spinach-cheese filling between the potatoes. Top with the rest of the cheese.
  5. Return stuffed potatoes to the oven for 6-8 minutes, or until cheese is melted and bubbly.
  6. Sprinkle parsley on top, if using, and serve hot.
