- 2 boneless, skinless chicken breasts
- 1 can (15 oz) black beans, drained & rinsed
- 1 can (14.5 oz) diced tomatoes
- 1 cup low-sodium chicken broth
- 1 medium onion, chopped
- 2 cloves garlic, minced
- 1 small red bell pepper, diced
- 2 tsp chili powder
- 1 tsp ground cumin
- 1/2 tsp smoked paprika
- 1/2 tsp salt
- 1/4 tsp black pepper
- 1 tbsp olive oil
- Optional: fresh cilantro, Greek yogurt, lime wedges for serving.
Instructions
- Heat olive oil in a large pot over medium heat. Add onion and bell pepper and sautΓ© for 3-4 minutes until softened.
- Stir in garlic, chili powder, cumin, smoked paprika, salt, and pepper; cook for 30 seconds until fragrant.
- Add chicken breasts, black beans, diced tomatoes (with juices), and chicken broth to the pot. Mix well.
- Bring mixture to a boil, then reduce heat and cover. Simmer for 20-25 minutes until chicken is fully cooked.
- Remove chicken, shred with two forks, then return to pot and stir.
- Simmer uncovered for 5 more minutes to thicken, then serve hot. Top with cilantro, Greek yogurt, and a squeeze of lime as desired.
