- 1 lb lean ground turkey
- 1 cup dry brown lentils, rinsed
- 1 large yellow onion, diced
- 2 cloves garlic, minced
- 2 cups low-sodium chicken broth
- 1 can (15 oz) diced tomatoes, undrained
- 2 cups baby spinach, roughly chopped
- 1 tsp dried oregano
- 1 tsp ground cumin
- 1/2 tsp black pepper
- 1/2 tsp salt
- 1 tbsp olive oil
Instructions
- Heat olive oil in a large pot over medium heat. Add diced onion and sautΓ© for 4-5 minutes until soft.
- Stir in the garlic and cook for 1 minute until fragrant.
- Add ground turkey to the pot, breaking it up as it cooks, until no longer pink.
- Sprinkle in the dried oregano, cumin, black pepper, and salt. Stir to coat the turkey and onion mixture.
- Add lentils, diced tomatoes (with juices), and chicken broth. Bring to a boil, then reduce heat to a simmer.
- Cover and simmer for 25-30 minutes until lentils are tender, stirring occasionally.
- Stir in the chopped spinach and cook for another 3-4 minutes until wilted.
- Taste and adjust salt or seasoning as needed before serving.
