
Ingredients
- 1 can (5 oz) tuna in water, drained
- 1 cup cooked chickpeas (or canned, rinsed and drained)
- 1/3 cup diced red bell pepper
- 1/3 cup chopped cucumber
- 2 tbsp finely chopped red onion
- 2 tbsp fresh parsley, chopped
- 2 tbsp fresh lemon juice
- 1 tbsp olive oil
- 1/2 tsp cracked black pepper
- 1/4 tsp sea salt
Instructions
- Add the drained tuna and chickpeas to a medium mixing bowl and mash lightly with a fork to break up the chickpeas slightly.
- Mix in the bell pepper, cucumber, red onion, and parsley.
- In a small bowl, whisk together the lemon juice, olive oil, pepper, and salt.
- Pour the dressing over the salad and toss until everything is well coated.
- Serve chilled or at room temperature, alone or over greens.
