- 2 salmon fillets (about 5 oz each)
- 2 tablespoons white miso paste
- 1 tablespoon pure maple syrup
- 2 teaspoons low-sodium soy sauce
- 1 teaspoon rice vinegar
- 1 cup cooked brown rice
- 1 cup shelled edamame, thawed if frozen
- 1 teaspoon sesame oil
- 1 scallion, thinly sliced
- 1 teaspoon toasted sesame seeds
- 1/2 cucumber, thinly sliced
Instructions
- Heat oven to 425°F and line a baking sheet with parchment.
- In a small bowl, whisk together miso paste, maple syrup, soy sauce, and rice vinegar.
- Place salmon fillets skin-side down on the prepared baking sheet and brush generously with the miso maple glaze.
- Roast salmon in the oven for 10-12 minutes, until it flakes easily with a fork.
- While salmon cooks, heat sesame oil in a skillet, add shelled edamame, and sauté for 2 minutes.
- To serve, divide brown rice between bowls, top with sautéed edamame, sliced cucumber, and roasted salmon.
- Garnish each bowl with scallions and sesame seeds before serving.
