- 1 lb lean ground turkey
- 2 medium sweet potatoes (peeled and diced)
- 1 tbsp olive oil
- 1 red bell pepper (diced)
- 1 small yellow onion (diced)
- 2 cloves garlic (minced)
- 1 tsp smoked paprika
- 1/2 tsp ground cumin
- 1/2 tsp black pepper
- 1/2 tsp sea salt
- 1/4 cup low-sodium chicken broth
- 2 cups baby spinach
Instructions
- Heat the olive oil in a large skillet over medium heat.
- Add the diced onions and bell pepper and sautΓ© 3-4 minutes until slightly soft.
- Stir in the garlic, smoked paprika, cumin, salt, and pepper, cooking until fragrant (about 1 minute).
- Add the ground turkey and cook, breaking it up as it browns, about 6-7 minutes.
- Toss in the diced sweet potatoes and chicken broth. Cover and cook for 10-12 minutes, stirring occasionally, until the sweet potatoes are fork-tender.
- Uncover, stir in the spinach, and cook another 2 minutes until wilted.
- Taste and adjust seasoning if needed. Serve hot.
