- 8 oz raw shrimp (peeled and deveined)
- 1 cup canned black beans (rinsed and drained)
- 1 cup cooked brown rice
- 1 cup chopped bell pepper
- 1/2 cup diced tomato
- 2 cloves garlic (minced)
- 1 tbsp olive oil
- 1/2 tsp smoked paprika
- 1/4 tsp chili powder
- 1/2 tsp cumin
- Juice of 1/2 lime
- Salt and pepper to taste
- 2 tbsp fresh cilantro (chopped, for garnish)
Instructions
- In a bowl, toss the shrimp with smoked paprika, chili powder, cumin, half the garlic, lime juice, salt, and pepper.
- Heat olive oil in a skillet over medium-high. Add marinated shrimp and cook 2-3 minutes per side until pink and cooked through. Set aside.
- Add remaining garlic and bell pepper to the skillet; cook for 2-3 minutes until slightly tender.
- Add black beans and tomato to the skillet, stirring until heated through.
- Divide cooked brown rice between two bowls. Top with bean and pepper mixture, then shrimp.
- Sprinkle with fresh cilantro and a squeeze more lime if desired. Serve warm.
