
Ingredients
- 1 lb boneless, skinless chicken breast, diced
- 1 tbsp olive oil
- 2 cups broccoli florets
- 1 bell pepper sliced thin
- 2 cups snow peas
- 1/4 cup natural peanut butter
- 2 tbsp low-sodium soy sauce
- 2 tbsp rice vinegar
- 1 tbsp honey
- 2 cloves garlic, minced
- 1 tbsp ginger, grated
- 1-2 tsp sriracha
- 1/4 cup water
- 2 scallions sliced (for garnish)
Instructions
- Heat olive oil in a large skillet over medium-high heat.
- SautΓ© chicken for 4-5 minutes until just cooked through. Remove from pan and set aside.
- In the same pan, add broccoli, bell pepper, and snow peas. Stir-fry for 3-4 minutes until crisp-tender.
- In a bowl, whisk together peanut butter, soy sauce, rice vinegar, honey, garlic, ginger, sriracha, and water until smooth.
- Return chicken to the pan, pour the sauce over everything, and toss to coat. Cook another 2 minutes until heated through.
- Serve hot, garnished with sliced scallions.
