- 1/4 cup shredded carrots

- 1 tablespoon rice vinegar
- 1 teaspoon sesame oil
- 1 teaspoon toasted sesame seeds
- 1 scallion (sliced)
Instructions
- Place salmon fillets on a baking sheet and season lightly with salt and pepper.
- Broil the salmon on high for 6-8 minutes, or until just cooked through.
- While salmon cooks, whisk soy sauce, sriracha, rice vinegar, and sesame oil in a small bowl for your sauce.
- Divide the rice between two bowls, then top each with edamame, cucumber, carrots, and cooked salmon.
- Drizzle with the sauce, sprinkle with sesame seeds and scallion, and serve immediately.
